Football season is here...try this recipe!

Football season is finally back and with it all the fun parties and delicious finger foods. Try this easy recipe for your next football party.  If you are going to someone else's house, make it in advance and heat it up in their oven when you arrive.  I have been using this same recipe for years now, and it is a hit anywhere I take it.






 
Spinach, Caramelized Onion & Artichoke Dip
2 tbsp. Extra Virgin Olive Oil
2 cloves garlic (minced)
1 yellow onion (julienned)
1 bag (12oz.) spinach
1 can artichokes
2 - 8 oz. boxes cream cheese (softened)
8 oz. shredded parmesan
1 pint heavy whipping cream
8 oz. sour cream
1/2 c. chicken stock
dash nutmeg
2 tbsp. kosher salt
2 tsp. fresh ground black pepper
1.Preheat oven to broil
 2.On medium high, heat olive oil in a large pot
 3.Add the yellow onions and cook for about 2 minutes, constantly stirring
 4.Add the garlic and turn to medium heat
 5.Stir intermittently until the onions caramelize (deep golden brown)
 6.Add the spinach and allow it to wilt all the way
 7.Add the artichokes, cream cheese, sour cream, heavy cream, and chicken stock
 8.Once cream cheese breaks down all the way and the mixture is totally combined, melt the cheese in, reserving 1 oz. for topping
 9.Add 2 kosher salt, pepper, and nutmeg
 10.Portion mixture equally into oven safe bakeware that you want to serve the dip in.  You can use any shape or size, depending on how you want to serve
 11.Top the mixture with remaining parmesan cheese and broil for approximately 4 minutes (until cheese browns on top)
 12.Serve with tortilla chips, toast points, pretzels, crackers, or all of the above.
