Biscuits Anyone?












Here are some great breakfast or dinner time biscuits.

Pepper Cheddar Bacon Biscuits
2 c all-purpose flour, plus extra for rolling
2 tsp baking powder
1 tsp salt
1 stick plus 2 tbsp unsalted butter (stick cut into cubes and chilled, 2 tbsp melted)
3/4 c buttermilk
6 strips cooked bacon (I like to use the thick bacon)
1 c cheddar cheese
Fresh ground pepper

1. Preheat oven to 425 F.
2. In large mixing bowl, combine flour, baking powder, and salt.
3. Cut in cube butter one at a time until it resembles coarse meal.
4. Add in buttermilk and stir with a fork until soft dough forms.
5. Add in bacon, cheese, and about a tsp of black pepper. *use more or less pepper depending on how much you like it.
6. Remove dough from bowl on place on floured countertop. Knead the dough 2 or 3 times or until it comes together.
7. Using a floured rolling pin, roll dough out into 1/2 inch thick.
8. Using any size biscuits cutter you like cut the dough out.
9. Place biscuits on baking sheet lined with parchment paper.
10. Bake for 20 minutes or until golden brown on the top.  Brush the melted butter on top and enjoy.
