Cinnamon Sugar Pretzel with Icing


You know when you're in the mall and you can smell this delicious thing in the distance and as you get closer and closer you realize it is Auntie Annie's.  Well, that happens to me everytime I visit the mall, which isn't often. So I decided to give making them a try just to see if I could get even a little close to those twisted little pieces of heaven at the mall.  I have to say I think I got pretty close, but I'll let you be the judge of that. 

Ingredients
1 1/2 c warm water
1 1/8 tsp active dry yeast
2 tbsp brown sugar
1 1/8 salt
1 c bread flour
3 c regular flour
2 c warm water
2 cup warm water
2 tbsp baking soda
4 tbsp butter - melted
1/2 c sugar
1 tbsp cinnamon

Sprinkle yeast into the mixing bowl with lukewarm water in it; stir to dissolve.  Add brown sugar, salt, and stir to dissolve.  Add both flours and knead dough until smooth and elastic.  Let rise at least 1 hour.  While dough is rising, prepare the baking soda bath water with 2 cups warm water and 2 tbsp baking soda.  Be certain to stir often.  After dough has risen, take the ball of dough and roll it out to about 1/2 inch thick.  Cut into long rope pieces (make sure to roll in between both hands the whole way down each pieces of rope dough) and shape into a pretzel.  Dip pretzel in soda water and place on greased baking sheet.  Allow pretzels to rise again 10-15 minutes.  Bake at 350 degrees for about 20-25 minutes or until golden.  While pretzels are baking take sugar and cinnamon and combine.  Brush with melted butter and sprinkle with cinnamon and sugar mixture on top. 

Vanilla Icing
1 c powdered sugar
2 tbsp milk
1 tbsp butter - melted
1 tsp vanilla extract
Combine all ingredients together and mix well.  Let pretzels cool down a little and then coat with vanilla glaze.
