Strawberry Shortcake Cupcakes

This is a great summer dessert idea for a party or get together.  Easy & Delicious!
Strawberry Cupcake
makes about 12

1 stick butter, room temp
3/4 c sugar
2 large eggs
1 tsp vanilla extract
1 1/2 c all-purpose flour
1 tsp baking powder
1 c chopped strawberries
whipped cream
strawberry slices

Preheat oven 350 degree F.  Line cupcake tin with paper liners.  In a mixer beat butter and sugar together until light and fluffy. Add the eggs in one at a time mixing well between each egg.  Add vanilla, flour, & baking powder to mixture. Make sure the batter is smooth.  Fold the chopped strawberries into the mixture (do not stir the strawberries).  Divide batter into the cupcake pan.  Bake about 20 minutes or until a toothpick comes out clean.  Cool cupcake on a wire rack.  Serve with a dollop of whipped cream and a sliced strawberry.
