HOMEMADE "CHEEZ ITS"

A few months back I bought this book to help with meal ideas for Parker.  He can be the pickiest eater when it comes to trying new and healthy things.  So we needed help thinking of ways to introduce new foods to him with a twist.  This book helped with that so much! One of our favorite snacks we have made were these amazing Cheese Crackers...aka... Homemade Cheez Its.  

Ingredients
2 cups grated white extra-sharp cheddar cheese
3/4 cup unsalted butter, softened and cut into pieces
1 cup flour + more for dusting
1/2 tsp salt
2 to 3 tbsp milk

Preheat the oven to 375 degree F

Put everything except the milk in a food processor.  Pulse the processor, 5 seconds at a time, about 5 to 6 times, until the dough is in coarse crumbs.  Slowly add the milk and process until the dough gathers together into a ball.

Divide the dough into two balls.  With a floured rolling pin, roll each dough ball out on a floured surface until it is about 1/8-inch thick.  Cut the dough into 1-inch squares with a pastry wheel.  Use a toothpick or skewer to poke a hole in the center of each cracker.

Place the crackers at least 1/4-inch apart on parchment paper on a baking sheet.

Bake for 12 to 18 minutes until the edges are just starting to brown.  They might puff up too.  If you are baking two pans at the same time, swap/rotate the pans halfway through.

Slide the baking sheet off the pan onto a cooling rack, and let the crackers cool completely.

Eat or store in an airtight container to eat within a few days.
