WHITE CHOCOLATE CRANBERRY OATMEAL COOKIES

Ingredients

1/2 C unsalted butter, softened
1/2 c granulated sugar
1/2 c light brown sugar
1 large egg
1 1/2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
3/4 c all-purpose flour
1 1/2 c old fashioned oats
3/4 c white chocolate chips
3/4 dried cranberries
1/2 a bag of vanilla candy melts

In a stand mixer, cream together butter and sugars for about 2-3 minutes, should be light and fluffy. Mix in egg and vanilla until well combined.  Add in baking powder, baking soda, salt and cinnamon.  Scrape bowl as needed.  Mix in flour and oats. With a spatula, stir in the white chocolate chips and dried cranberries. 

Refrigerate dough for 30 minutes.

Preheat oven to 350 degrees.  Line baking sheet with parchment paper.

Scoop dough using cookie scoop about 2-3 inches apart on baking sheet.  Top with additional chocolate chips and cranberries.  Then lightly press down on the cookies.

Bake for 12-14 minutes or until the edges are just set.  Remove from oven and cool on a cookie rack.

While cookies are cooling, take vanilla candy melts and place in microwave until melted.  Do in 30 second increments stirring in-between each time.  Take a spoon and drizzle the candy melts over each cookie.
